Most all theme parks have their own official website. I would suggest google.com for searching, just input the theme park's name into the search. Also www.rcdb.com is good for information and pictures.

Lot's of coaster videos can be found at www.themeparkreview.com. That's the best site I know of for general theme park related stuff.

It is typical with Disney (there are a lot of those sites) But the one park I know and wich is surrounded by many-many dedicated fansites is Efteling in The Netherlands.
