Dole Whips and Churros, of course! I've never had a Dole Whip, but everyone else raves about them so they must be good.
Based on my trusty park map, Carnation Cafe, Plaza Inn, (as strange as it sounds) Bengal BBQ, Blue Bayou, Conestoga Fries, Village Haus, and Redd Rockett's all have healthy foods and vegetarion options.
If you don't like those you can always get Mickey Mouse ice cream things.

I am also a vegetarian and managed to eat pretty well when we were in Disneyland in June. At the Hungry Bear, you can request a garden burger instead of a regular one, but it's not on the menu, you have to ask for it. They have a wonderful Penne Pasta at the Carnation Cafe and at Redd Rockett's Pizza Port, they make a caesar salad minus the chicken that is really good. Plus you always have the Dole Pineapple whip and churros option =) I think you can find these things at restaurants at DCA as well. Hope this helps!

The French Market in NOS also has a vegetarian lasagne that is quite good.

I had a delicious three-cheese and veggie sandwich with a very subtle pesto mayonaisse, fruit on the side, at the Carnation Cafe, Main Street (the little alfresco - very fresco - bistro between the Emporium and the Bakery) just yesterday.

May I also include within this thread that All the restaurants within DL and DCA upon requsest will accommodate vegetarians. However, VEGAN meals are not an option. They will indeed need to go to the fruit/veggie venders for such options. No where within the resort infact including downtown Disney has no option for vegan fare.

You can also get your hand stamped and go to any of the restaurants in Downtown Disney.
