I know this is going to sound like a broken record, but I'll say it again: Eureka! Compilation. I must've requested it a dozen times before the Crash of '08, and it's one of the few titles I have not seen re-appear.
Also, is there any way to get some of the Disney Classics in alternate languages, like 'L'amour Brille Sous les Etoiles' ('Can You Feel the Love Tonight' in French) or 'Notre Histoire d'Amour' (The End theme to Pocahontas in French, but it is not a strict translation, and sounds just as good, if not better than the English version)? They're interesting to hear, or maybe some audio tracks from DLP or Tokyo SeaDisney attractions that encourage more international Disney sampling. Or maybe just some laughs, as many who listen to these do tend to laugh either at the accents or the manner in which they're forced to speak in sync with the English actor. I don't know, that's just my two cents.
Also, some less outlandish requests:
The Brother Bear soundtrack
The Chronicles of Narnia soundtrack
Some of the historical audio files that were in the system before the crash. There was one that was almost an hour of collected clips from across two or three decades of the park, but the title escapes me.
The Dapper Dans tracks that were up before the crash (such as 'Alexander's Ragtime Band')
The Fantasmic! Soundtrack (the segmented version so maybe members could simply request the sections they wish to hear. I could even edit the version you have into more manageable sections)
Raiders of the Lost Arc, or area music from the Stunt Spectacular in Hollywood Studios
Rick McKee's 50'th Anniversary version of the VF Theme
