I also recommend a waterside seat at the Blue Bayou, but it may mean a longer wait. But I think it's worth it. Basically you're required to check in about 10 min before your scheduled time. At this point, ask about a waterside seat and they'll tell you how long the wait will be. It could be up to an hour though. You can't request it through Disney Dining.

As for the Monte Cristo, I know it's a Blue Bayou tradition, but you can find the exact same thing at Cafe Orleans, all day, for about $4 less.
